EASY HOMEMADE VODKA SAUCE
The average store-bought vodka sauce IS filled with added sugars, sodium, vegetable oils, and other things that make the product shelf-stable.
What if I told you you likely have all the ingredients on hand to make a quick, easy, and delicious homemade vodka sauce?! This sauce is perfect for topping your favorite pasta, chicken, or seafood. I promise it will become a staple in your dinner lineup!
ALL YOU NEED:
28 oz can of Crushed Tomatoes
1/4 cup Extra Virgin Olive Oil
1/4 cup Vodka (I use Titos because it’s Gluten Free)
1/2 cup Heavy Cream or Half & Half
2 Tbsp Butter (Kerry Gold is my favorite)
3 cloves Garlic
1-3 Tbsp Italian Parsley (fresh or dried)
Salt / Pepper / Red Pepper Flakes
1/2 bag (~2.5 oz) of Spinach [Optional]
DIRECTIONS:
Heat olive oil in a LARGE skillet over medium heat
Peel garlic and crush each clove with side of a knife
Add garlic to pan and cook until browned ~ 3 minutes
Turn down heat and add crushed tomatoes (slowly and carefully so that you don’t burn yourself)
Bring mixture to a boil. Add a sprinkle of salt, pepper, & crushed pepper (you won’t need much)
Pour in vodka, lower heat, and let simmer for 10 minutes.
Remove garlic cloves from sauce carefully with a spoon.
Add heavy cream or half & half. Add butter and parsley. Stir.
Once butter is melted into sauce, stir and taste test sauce.
Add salt/pepper/red pepper flakes as needed.
BONUS STEP: Add fresh spinach at the end of cooking—right before serving for added fiber, vitamins, Iron, antioxidants, and color!
Recipe makes about 5 servings
In order to make recipe dairy-free you can omit butter & heavy cream (or half & half) and ADD 1/2 cup of a nut milk like almond milk and add 1-3 Tbsp of canned tomato paste.
